Whole Wheat Cinnamon Roll Pancakes
About the only healthy parts of these pancakes are the whole wheat flour and the chia seeds, maybe the cinnamon? Other than that, it is so sugary and sweet you'll feel like you're eating a cinnamon roll! :]

Whole Wheat Cinnamon Roll Pancakes
Cinnamon Filling
2 tbsp coconut oil melted (you might need a bit more to meet desired consistency but try it with this first)
1/4C brown sugar (I used Mexican sugar which is between brown and white)
1 tsp cinnamon (you can add more if you'd like)
Frosting
1/2 cup powdered sugar
2-4 tbsp almond milk
Pancakes
1 cup whole wheat flour
2 tsp baking powder
1 tbsp ground chia seed (mix with 3 tbs of water, let rest for 15 minutes)
1 tbsp oil
1 cup almond milk
A pinch of salt
1 tsp of vanilla
Mix all the pancake ingredients together. Heat a frying pan and grease with a little oil or cooking spray if needed, my pan was fine without it. Then, mix the filling ingredients together and put in a small jug or bowl, set aside. Make the frosting by combining the powdered sugar and almond milk. Set aside. Spoon pancake batter into the frying pan and spread out slightly, cook for around 2 minutes or until it begins bubbling on the edges. Drizzle a swirl of the cinnamon filling on top and flip over to cook for about a minute on the other side. Stack up on a plate and drizzle the frosting over the top.
This can seem like an overwhelming recipe because of the various parts but doesn't take too long. I made 2 servings with this, we each got about 2 medium sized pancakes but because of all the sugar you could probably serve 4! Also, if using regular white flour you might get more of the cinnamon roll look, but I was happy with my brown pancakes :]
