apple spice cake + oatmeal cinnamon crumble

I had seen an apple cake recipe floating around when browsing through pinterest. The recipe used lots of butter and eggs and I wanted a vegan recipe so I decided to experiment. I was a little scared because I recalled the last time I experimented with a fruit/veggie baked cake it didn't turn out well. I tried making a zucchini bread for a friend's birthday but I got a little carried away with the zucchini and unfortunately it was too mushy. These, however turned out great! Recipe below: apple spice cake + oatmeal cinnamon crumble

  • 2 cups all purpose white flour (you could probably use a healthier one or oat flour)

  • 1 cup of white sugar (can do half white half brown)

  • 1/2 tsp of salt

  • 2 tsp of baking powder

  • 1/2 tsp of baking soda

  • 2 tsp of cinnamon

  • 3 cups shredded apple (I used around 4 apples)

  • 3/4 cup of vegetable oil

  • 1 teaspoon vanilla

  • 1/2 cup of almond milk

How to: 

Preheat oven to 350 degrees and line cupcake pan.

Mix together the flour, sugar, salt, baking powder, baking soda and cinnamon until thoroughly combined. Add the shredded carrots and the oil to the dry ingredients and mix well with a spoon or fork.

Add the almond milk and vanilla and mix again. Fill each cavity about 2/3 full, add crumble topping (recipe below ) to top.

Bake for 25-30 minutes or until knife/toothpick comes out clean when inserted in the center.

Makes 12 cupcakes.

Oatmeal Cinnamon Crumble topping

  • 1/2 cup old fashioned oatmeal

  • 1/2 cup of sugar

  • 1/4 teaspoon cinnamon

  • 1 tablespoon coconut oil

  • optional: 1/2 cup chopped walnuts

How to:

Mix all ingredients with a fort except for coconut oil first, then add coconut oil until everything sticks together. If mixture is too dry you can add a bit more coconut oil.
