Vegan Aguachile

A super quick and spicy recipe! You could probably replace the base veggies for shredded jicama, fresh coconut or tofu if you don’t like mushrooms or cauliflower ✨💕

Vegan Aguachile

  • 1/2 head cauliflower 

  • 1 pack oyster mushrooms 

  • 1 handful of cilantro 

  • 4 chiles serranos

  • juice of about 8 limes

  • 1/4 red onion thinly sliced

  • 1 cucumber thinly sliced

  • avocado slices

Instructions:

  • Separate your cauliflower florets and cook in water about 15-20 until fork tender. Once cooked run it under cold water and cut to small pieces.

  • Squeeze a but of lime juice over your onions. Set aside

  • Shred your clean oyster mushrooms or with your hands or with two forks.

  • Blend cilantro, chiles, lime juice and a bit of salt. 

  • Add chlle mixture to your cooled cauliflower, oyster mushrooms and add in onions and cucumber. Salt to taste. Chill in fridge for a few hours. Once chilled serve on tostadas and top with avocado.
