refreshing summer salad: cucumber, carrot, jicama salad
Here's a super simple summer salad that would pair well with a protein dish. It's light and cold, perfect for a hot summer's day. The recipe is super simple!
- 1 chopped cucumber
- 2 chopped carrots
- 1/4 of chopped and peeled jicama
- 1/2 a chopped serrano chile (or more if you like spice)
- Juice of 2 limes
- Handful of chopped cilantro
- optional: chopped avocado
Mix all ingredients and add salt to taste. Let chill for at least half hour, best served cold.
