refreshing summer salad: cucumber, carrot, jicama salad

Here's a super simple summer salad that would pair well with a protein dish. It's light and cold, perfect for a hot summer's day. The recipe is super simple! salad

  • 1 chopped cucumber
  • 2 chopped carrots
  • 1/4 of chopped and peeled jicama
  • 1/2 a chopped serrano chile (or more if you like spice)
  • Juice of 2 limes
  • Handful of chopped cilantro
  • optional: chopped avocado

Mix all ingredients and add salt to taste. Let chill for at least half hour, best served cold.
