Portobello-Potato Tacos

I love portobello mushrooms. They have good flavor and add a bit of protein to your meals. These tacos were a tasty, quick meal I recommend. With a side of rice and beans these can make a substantial meal. Image

Portobello-Potato Tacos Serves:3-4

  • 1 portobello mushroom
  • 1 potato
  • 1 clove of chopped garlic
  • Salt to taste
  • 1tsp of dried parsley

How to:

Dice your potatoes into small cubes. Peeling your potatoes if optional. Cook your potatoes until softened but not mushy in a pot of water with a bit of salt. Once your potatoes are cooked drain them, add them to a skillet with a bit of oil or water and brown your potatoes a bit adding your chopped garlic and your chopped portobello mushroom and dried parsley, and salt to taste. You want your mushroom to be cut into tiny pieces so you get a piece in every bite. Once your potato-mushroom mixture has cooked it is ready to enjoy. Eat them with some warmed tortillas and top with a fresh salsa and some lime juice.
