Cilantro-lime rice
This is a simple way to dress up plain white rice. It tastes extra yummy with some corn and a side of beans.
Cilantro-Lime Rice Serves 4+
- 2 cups of water
- 1 cup of rice (white or any kind you like)
- 1/2 cup of chopped cilantro
- Juice of 1-2 limes (depending on how much you like lime)
- Salt to taste
- Corn kernels (optional)
How to:
First rinse your rice. Then boil your water and then add your rice, and a bit of salt to your pot. Cook your rice for about 18-20 minutes with the lid covered until soft. If adding corn you can add it to your rice while it's cooking.
Once your rice has cooked stir in cilantro and lime just before serving.
