Marbled Chocolate Peanut Butter Banana Bread

Life has been challenging the last couple of months. Re-adjusting to a new schedule, being in a new environment and many new challenges have surfaced for me. Despite it all, I have been able to find comfort in having a loving partner and being able to  do what I love and enjoy. One of these things is definitely baking, I love that I have been able to try out new recipes. What's even more awesome about this recipe is that it has chocolate, peanut butter, and banana. This recipe is adapted from the Post Punk Vegan Kitchen recipe

Marbled Chocolate Peanut Butter Banana Bread

  • 3 very ripe mashed bananas
  • 3/4 cups sugar
  • 1/2 cup natural peanut butter (I used chunky)
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons canola oil
  • 1/3 cup almond milk
  • 1 1/2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt (omit if your pb is salty)
  • 3 tablespoons unsweetened cocoa powder
  • 8 tablespoons boiling water, divided

How to:

Prepare boiling water, maybe about a cup. Preheat oven to 350 F.

Mash the banana in a large mixing bowl until smooth. Beat in the sugar, canola oil, almond milk and vanilla.

Now add the flour, baking soda and salt and gently mix in. It’s okay if there is some flour still visible, make sure not to overmix.

Scoop one cup of the batter up and put it in a separate mixing bowl. Now, in a small tea cup/mug mix the cocoa powder with 4 tablespoons boiling water and stir vigorously with a fork until the chocolate is dissolved. Mine got a little paste like, which is why I added 4 tablespoons. Add this chocolate mixture to the one cup of banana and mix until the chocolate is smooth and incorporated.

In the original plain banana batter, stir in the peanut butter, then the 4 tablespoons of boiling water and mix the batter just until relatively smooth.

Then, lightly grease an 8×4 loaf pan. Scoop alternate 1/2 cupfuls of chocolate/ peanut butter banana batter into the loaf pan. Once all of the batter is in, take a butter knife and swirl it through the batter in circular directions for about 10 seconds.

Bake for 55 minutes. Use a butter knife to test for doneness. Let cool and enjoy! The marbling is not as distinct as in the recipe without the peanut butter, but the peanut butter makes a big difference.
