oatmeal raisin cookies

A good oatmeal raisin cookie  recipe is always hard to find. Before I was vegan I had tried the one in the back of the oatmeal container and they alway came out to dry and not spicy enough for me. This recipe is tasty and satisfies my soft, spicy, oatmeal raisin cookie craving. ps. I haven't been posting the healthiest recipes, I am aware of that. I like sweets and want to make sure I try enough baked recipes so that I can have a go to recipe for whenever I need to bake cookies (birthdays, holidays, potlucks etc.)

Oatmeal raisin cookies adapted from cookie madness

  • 3/4 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1/2 scant teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin spice
  • 1/2 cup sugar (can do half brown, half white)
  • 3-4 tablespoons maple syrup depending on how sweet you want your cookies
  • 1/4 cup applesauce (I used the size of one individual serving applesauce container)
  • 1/4 cup vegetable oil (can use coconut oil)
  • 1/2 teaspoon vanilla
  • 1 1/2 cup rolled oats
  • 1/2 cup raisins, plumped and patted dry
  • Walnuts (optional)
 How to:
Preheat oven to 350 degrees F.
Mix together the flour, baking soda, salt and cinnamon. Set aside. Mix sugar, maple syrup, applesauce, oil and vanilla together in a medium bowl. Add the flour mixture and stir until blended. Stir in the oats, followed by raisins. Let sit for 10 minutes. Drop by rounded teaspoonfuls onto the cookie sheets. Bake for 12-14 minutes. Let cool for about 5-8 minutes on cookie sheets then carefully scoop up onto a wire rack.
