Vegan Banana Bread
An easy vegan banana bread recipe to comfort your soul and rescue ripe platanitos
Ingredients
¼ cup almond milk
½ tsp apple cider vinegar
½ c vegan butter
1 cup brown sugar
2-3 very ripe medium bananas, mashed (Ideally 3 bananas but two works too)
1 tsp vanilla
2 cups flour
1 tsp baking powder
½ tsp baking soda
1/2 tsp cinnamon
¼ tsp salt
¾ cup walnuts
Instructions
•Preheat oven to 350F.
•Grease and flour a 9" loaf pan or line cupcake tin
•In a small bowl, stir together vegan milk and vinegar. Set aside for a few minutes.
•In a mixer cream together vegan butter and sugar.
•Add bananas, vanilla, and milk mixture and beat.
•In a medium bowl, sift together flours, baking powder, cinnamon,baking soda, salt
•Combine flour mixture with wet mixture until combined, be sure not to over mix.
•Fold in walnuts
•Pour into greased pan or cupcake liners. Bake for 45 for loaf or 25-30 minutes for muffins. Done when inserting a toothpick in middle and fork and there’s no liquid batter.
•Let cool 5 minutes and then remove from pan.
