Vegan Protein Banana Pancakes

Hi friends! I know what you're thinking...not another pancake recipe, but yet here's another. This one is jam-packed with protein, has tasty banana and cinnamon and no added sugar. One of my protein powders is SunWarrior because it is raw, not really weird tasting and plenty of protein. You can get small packets at nutrition stores to see if you like it before committing to a large package. They have various varieties and flavors.

Vegan Protein Banana Pancakes adapted from Vega.com

Serves 2

  • 1 large banana, mashed

  • 1 tsp vanilla extract

  • 1 1/4 cup almond milk

  • 1 cup whole wheat flour (can use gluten-free flour as well)

  • 1 scoop sunwarrior protein powder or protein of choice

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ¼ tsp cinnamon

How to:

Mix together almond milk, vanilla extract, and mashed banana, set aside. In a separate bowl mix dry ingredients. After dry ingredients are mixed together add wet mixture. If batter is too thick add more liquid.Pour portions of batter onto hot non-stick pan/skillet. Let batter cook for a couple minutes until bubbles appear and then turn. If not using non-stick pan, use coconut oil or preferred oil.

Top with fruit and syrup, jam, etc.
